Lazy Healthy Crockpot Chicken Tortilla Soup

If you’re anything like me, you love delicious food but you also don’t like to spend a ton of time on making delicious food. When you are strapped for time, just plain lazy, or maybe haven’t been to the grocery store in awhile, many of these items are already in your kitchen pantry. This tasty chicken tortilla soup takes maybe five minutes to make and tastes pretty yummy.


4 cups chicken broth

1 pound of chicken

1 can corn

1 can black beans

1 can chopped tomatoes (I prefer Rotel)

1/8 cup maza corn flour

1 bell pepper

Three dashes of lime juice

1 ounce packet of Mexican taco seasoning

The imported ingredients I managed to scrounge up in Saudi Arabia

Optional toppings:

Grated Monterrey jack cheese

Diced avocado

Broken tortilla chips


Put chicken in first, then seasoning. Chop up bell pepper and add. Layer the rest of ingredients on top. Put on high 4-5 hours. Garnish with tortilla chips, grated Monterrey Jack cheese and avocados if desired!
